UPDATE: The Moruya Waterfront Hotel, a historic establishment on the banks of the Moruya River, has a new publican, Ben Ryan, who is set to revitalize the venue starting today. Ryan, a seasoned pub owner from Charleville and Cobar, takes over from Linda and Mark Ethell, who ran the hotel for the past 11 years.
This long-standing pub, which has seen various names over its 180-year history, is poised for a transformation. Ryan emphasizes that while he appreciates the tradition of pubs, he aims to simplify and rejuvenate the Waterfront’s atmosphere. “It certainly needs a good lot of TLC and a lighter paint colour,” he said, indicating a move away from the current nightclub-like vibe.
Ryan plans to remove the tent from the beer garden, a decision he humorously frames as a move away from “a part-time circus.” Instead, he aims to create a more inviting space for patrons. “What’s not to like about sitting out here on a Sunday afternoon having a nibble and a beer overlooking the water?” he added.
Among the immediate changes are enhancements to the drink menu, with new wines, cocktails, and rotating ales. Ryan’s approach is straightforward: “If there’s a beer I haven’t had, I’ll have that. If you don’t like it, well you just don’t have another one.”
In the kitchen, chef Sam Cray will remain, launching a new summer menu that focuses on simplicity. Ryan believes in keeping food straightforward, stating, “I just want a steak. It doesn’t need to be drizzled with this or infused with that.”
As Ryan steps into his new role, he is committed to honoring the history of the Moruya Waterfront Hotel while making it a more enjoyable place for locals and visitors alike. The community can expect a fresh take on their beloved pub, with changes rolling out starting today.
