The restaurant will open at a new shopping center located at 7000 Hialeah Gardens Boulevard by the end of spring 2026, according to franchise owner Alex Maduro. This new establishment marks a significant step in the brand’s evolution as it transitions to a more streamlined identity, simply known as “Carrot.”
Maduro shared details about the new 1,858 square foot space, emphasizing its fresh look. This rebranding effort comes in response to customer feedback; many patrons have been informally shortening the name to “Carrot.” Despite this change, customers can expect their beloved menu items to remain intact.
Among the popular offerings are the nutrient-rich loaded sweet potatoes, the Paradise Bowl—which features organic Brazilian açaí topped with granola, strawberries, blueberries, banana, pineapple, and coconut flakes drizzled with honey—and the signature carrot cake made with avocado oil, fresh carrots, sweet raisins, and crunchy walnuts.

Founded in 1993 by Mario Laufer, Carrot Express began its journey in a gas station in Miami Beach. Since then, the restaurant has gained popularity for its healthy, high-quality bowls, wraps, juices, and all-day breakfast options.
