family-s-food-truck-spudalot-takes-region-by-storm-in-just-months

UPDATE: A new food truck, Spudalot, is making waves in Armidale, transforming a simple family tradition into a booming business in less than a year. Created by local residents Rob and Sue Wilcox, this innovative venture specializes in loaded potatoes topped with a variety of delicious ingredients, quickly gaining popularity at festivals and events across the region.

The idea for Spudalot was born during a family meal in July 2022. “Every Friday night, we do potatoes, and I was always trying new and different ways of prepping them,” Sue Wilcox revealed. This family tradition inspired them to purchase a food truck, and just days after brainstorming the concept, they were in Sydney looking at vans.

Since launching, Spudalot has received an outpouring of positive feedback. “We have had nothing but positive reviews from everyone who has tried our food,” Sue shared. “It’s been bloody fantastic knowing that people are loving the meals just as much as we loved them at the dinner table.” Long lines of eager customers now greet them at local events, showcasing the community’s enthusiasm for their unique offerings.

The Wilcox family, including their four children aged from 3 to 18, taste-tests every new recipe. “They have been through the whole menu at least once,” Sue noted, emphasizing the family-oriented nature of their business. They source their high-quality ingredients from Get Fresh Wholesale, thanking local suppliers for their invaluable support.

Spudalot is not just a food truck; it’s a community effort. “Without the support we have had from other local business owners, we would have had a much more difficult time getting off the ground,” Rob Wilcox stated. The couple has expressed gratitude to local businesses like East Armidale Store and Easy as Coffee, highlighting the importance of collaboration in their success.

Looking ahead, Spudalot is set to participate in multiple upcoming events, including the Guyra Trout Fest and the Armidale Running Festival. “There are so many fantastic festivals and events around the immediate area, and we are excited to be part of them,” Rob mentioned. Their journey has just begun, and they remain committed to enjoying the process. “The moment we stop having fun is the moment we give it away, but we cannot imagine that happening for a long time,” Sue concluded.

As Spudalot continues to capture the hearts and appetites of the community, it serves as a compelling reminder of how a simple family tradition can blossom into a thriving business. Keep an eye out for this delightful food truck at local festivals, and prepare to indulge in their famous loaded spuds.
