
A new dining establishment in Fairplay, Colorado, has temporarily ceased operations just weeks after its initial opening. The Colorado Cantina, located at 456 Front Street, announced its closure due to staffing challenges, with plans to reopen in Spring 2026.
The restaurant opened its doors for a soft launch in late August 2023, quickly generating local interest. Following a ribbon-cutting ceremony hosted by the South Park Chamber of Commerce, the excitement surrounding the cantina grew. However, by mid-September, the management expressed a need for additional kitchen staff, leading to a sudden announcement on September 21 that the restaurant would close for the season.
In a statement released on social media, the management noted, “We’ve made the tough decision to close for the season due to staffing challenges and will plan to reopen next spring. Thank you to everyone who’s supported us through our first season — we’ve loved getting to know this community and can’t wait to welcome you back with full service next year. This is just the beginning — see you in Spring 2026!”
The Colorado Cantina offers a menu featuring mountain-fresh American cuisine, infused with a Southwest flair. Despite some initial confusion regarding its branding, the restaurant has clarified that it is not a Mexican food establishment.
