Hudson House, known for serving the world’s coldest martinis, will open its first Arizona location in Gilbert, scheduled for 2026. The restaurant will feature its signature chilled cocktails as part of the new Heritage Park, a significant mixed-use development on Gilbert Road. According to East Valley Now, Heritage Park will transform one city block, offering over 47,000 square feet of retail and dining space alongside public areas and landscaped courtyards.
The development will also include 288 multifamily residential units and more than 300 parking spaces, creating a vibrant community hub. Hudson House joins three other dining concepts previously announced by the Flagship Restaurant Group: Ghost Donkey, Palma, and Blue Sushi Sake Grill.
Founded by renowned restaurateur Hunter Pond, Hudson House is operated by the Vandelay Hospitality Group. With nine existing locations across the United States, the Gilbert venue will mark its debut in Arizona. The restaurant draws inspiration from New York’s Hudson Valley, featuring a diverse menu that includes freshly shucked oysters, sushi, steak frites, lobster rolls, and a double smash cheeseburger.
Known for its signature drink, the “world’s coldest martini,” the Hudson House serves a unique Vesper-style martini that is shaken and served in a frozen glass, garnished with olives. Additionally, patrons can enjoy ice-cold espresso martinis, the Bleu & Gold martini with a bleu cheese salted rim, and a selection of seasonal offerings.
As Hudson House prepares to make its mark in Gilbert, the anticipation for its upscale dining experience and innovative cocktail offerings continues to grow. This new location promises to enhance the culinary landscape of the area, contributing to the ongoing development and revitalization of Gilbert’s downtown.
