Eggs Up Grill is set to enhance its presence in the Greater Houston area by signing a five-unit development agreement with franchisees Louis and Lisa Jones. The South Carolina-based breakfast brand aims to create a community-focused dining experience, with the first of these new locations expected to open in the last quarter of 2026.
The Joneses are committed to cultivating a strong community connection. “We are planning to be very hands-on,” Lisa Jones stated in an interview with What Now Houston. The couple emphasizes the importance of being involved in the local dining scene, where customers feel recognized and valued. Both have fond memories of restaurants where the owners greet patrons, fostering a sense of belonging.
Founded in 1997 by Chris Skodras in Pawleys Island, South Carolina, Eggs Up Grill started with a vision to create a comfortable and inviting atmosphere. The brand has expanded significantly since its inception and is now headquartered in Spartanburg, South Carolina. After beginning its franchising journey in the mid-2000s, the company saw remarkable growth under the leadership of current CEO Ricky Richardson, who took the helm in 2018. Today, there are over 100 locations primarily in the Southeast.
Richardson expressed enthusiasm for the expansion into Houston, stating, “We see tremendous opportunity in Houston and throughout the region as we work with multi-unit operators who can grow with the brand while offering guests great-tasting food and beverages with the Eggs Up Grill Promise of Everything to Make You Smile.” Currently, there is just one Eggs Up Grill location in the Greater Houston area, located in Conroe.
The decision to franchise in Houston was serendipitous for the Joneses, sparked during a golf trip to Myrtle Beach. Louis Jones discovered the restaurant while looking for a breakfast spot open early enough before his tee time. “It was one of the few restaurants that was open at 6 AM, which is early enough for me to eat before golf, and I just started to enjoy going there,” he recalled.
As they finalize lease agreements for the new locations, the Joneses aim to maintain the franchise’s community spirit. They plan to sponsor local sports teams, celebrate veterans, and establish a welcoming environment for all. “Eggs Up Grill really likes the franchisees to be a part of the community, so we’re really looking to just be a nice place that people can go,” Lisa Jones said.

Eggs Up Grill has built a reputation for a diverse and appealing menu, featuring classic breakfast options such as biscuit and gravy, steak and eggs, and various hearty bowls. The brand continues to innovate, with new offerings like a blueberry pancake with lemon custard, which Lisa enjoyed during her visits to Myrtle Beach. “When I went out to Myrtle Beach, I got it every time,” she remarked.
As plans progress, the Joneses express excitement about their future in Houston. “We’re looking forward to opening,” Lisa stated. “Yes, come out and give us a shot,” Louis added. The anticipated expansion marks a significant step for Eggs Up Grill as it aims to become a beloved part of the local community, with the first of five new locations expected to serve patrons by the end of 2026.
